Beef Fajitas, Cilantro-Lime Rice, and Corn

My parents asked me to cook dinner one Saturday, so I decided to make beef fajitas with cilantro-lime rice and corn!

Ingredients: 1 bag of pre-cooked beef tenderloin strips from Sam’s Club, 1 yellow bell pepper, 1 green bell pepper, 1 red bell pepper, and 1 white onion

Directions: Slice the bell peppers and onions into strips.  Heat 1 tablespoon of oil in a pan and cook the bell peppers and onion until tender (when the onions become clear).  Add the beef and cook until heated through (about 2-3 minutes).

Ingredients: Cilantro, 1/2 lemon, 1 1/2 cups of cooked rice

Directions: Wash and chop a handful of cilantro (about 6 sprigs).  Roll and cut the lemon in half.  Mix the cilantro, lemon juice, and rice together.  The juice from half of the lemon should be enough.  The amount of cilantro and lime/lemon to use really depends on how much of it you want in your rice.

Ingredients: 1 bag of frozen white corn, 1 green bell pepper, red pepper flakes, salt

Directions: Chop a green bell pepper into small pieces.  In a large pan, heat a 1/2 tablespoon of oil and cook the corn and bell pepper until tender.  Add red pepper flakes and salt to taste.
