Yam Leaves with Cumin and Red Pepper Flakes

My mom grows yam leaves in the backyard, so there’s always plenty to eat.  The only problem with this vegetable is that it’s a little mushy after it’s cooked, and we always use the same seasonings for it: salt and garlic.  I wanted to try something different, so why not with cumin and red pepper flakes?  Giada seasoned some chicken with these spices to make it Mediterranean, so I decided to see if Mediterranean-style yam leaves would taste any good.

Ingredients:

A large bowl’s worth of yam leaves- these leaves are big, but they shrink when they’re cooked
Cumin
Red Pepper Flakes

Directions:

1. Heat 1-2 tablespoons of oil in the pan.
2. Before the oil gets too hot, place the yam leaves in the pan, mix it in the oil, and cover.
3. When the leaves have cooked for a few minutes, add the cumin and red pepper flakes to taste.

The cumin makes it aromatic, and the red pepper flakes give it a little kick!
