Salmon Udon

A simple recipe from Okinawa!  I used spaghetti instead of udon and 2 cans of salmon instead of one.  The noodles are mixed with salmon, green onions, white onions, and a soy sauce mixture!


1 9 oz. package dry udon
2 tablespoons oil
1 onion, chopped
1 can (15 oz.) salmon
2 tablespoons soy sauce
1 tablespoon sugar
2 stalks green onion, chopped


1) Cook udon in water.  Don’t overcook.  Drain and set aside.
2) Drain salmon.  Discard skin and bones.
3) Heat oil in a skillet and stir-fry the onion.  Add salmon.  Mix the soy sauce and sugar together and pour over the salmon.  Add the udon and toss with the salmon to heat the udon.  Sprinkle with the green onions.
